Slow Cooker Cajun Sausage, Potatoes and Green Beans
I saw a recipe for foil packets that had sausage, potatoes and beans in it. I thought it sounded good but in all reality I would probably never make them since I don’t really camp or use my grill that often. I decided to transform the recipe into a one pot slow cooker meal. It worked out perfectly and the flavors were so scrumptious.
I don’t like cajun seasoning. If you’re not a fan of cajun seasoning your could use kielbasa sausage instead of andouille and use a different seasoning like montreal chicken seasoning or lemon pepper seasoning.
Where did you find your sausage? There are all sorts of types of sausage. For example chicken sausage with apples or kielbasa sausage. They look like plump hot dogs and come in a 12 ounce package. Really you could use any kind of sausage that you want. I chose an andouille cajun style sausage. I found mine in the grocery store by the bacon and other cured meats.
Can I use canned green beans? No. Don’t do it! Fresh green beans taste so great in this meal so use fresh. Plus canned green beans would get really mushy.
I don’t like mushrooms. It’s fine. You don’t have to add mushrooms in. You can definitely leave them out.
Can I use another type of potato besides red potatoes? You can. Yellow potatoes will cook at the same rate as red potatoes. Russet potatoes will take a bit longer and I would peel the russet potatoes if I were you. Add 1 hour to the cooking time for russet potatoes.

What Slow Cooker Did You Use?
To make Slow Cooker Cajun Sausage, Potatoes and Green Beans I used my 6 quart oval Kitchenaid slow cooker.* I love this slow cooker. It cooks low and evenly. I love the medium heat choice because most slow cookers that I’ve seen only have the option of cooking on low or high. If you’re going to buy just one slow cooker, this is the one that I recommend.

I love this recipe. Simple and tasty!! Made it a couple of years ago. Really liked it and forgot about it. I made it again and was mad I forgot about it. Make it quite often now. I don’t put the (fresh green beans) in until about an hour before it’s done. Beans are a little crunchy seems to bring out the flavor of the beans.
Karen says
I’m glad you found it again Lori!
Brendaly says
Should I still use Cajun seasoning if I’m using kelbasa sausage?
Karen says
You sure can! It’s totally up to you and what flavor you want to have.
Jeanie says
Can this be frozen for later…..it was so good. Thank you
Karen says
I think it would be just okay frozen. The potatoes might be a weird texture when reheated.
Jennifer says
How would canned green beans turn out in this?
Karen says
Mushy. I would add them in after pressure cooking.
Kim Romero says
Hi
could I also add chicken to this ?
Thank You,
kim
Karen says
Yes that would be great I’m sure!
Tracy says
Do you have any suggestions on the best type of pasta to use with this recipe?
Karen says
Are you serving pasta on the side? I would say rotini?
Jessica says
I have made this recipe and love it. Because there are only 2 of us, thinking of making half the recipe in a 4 quart crockpot, would you cook for the same amount of time? Probably going to use russet potatoes as that is what I have on hand
Karen says
I’d use the same time!
Bshaw says
This is a good, easy, flavorful recipe. I used Emeril’s Cajun seasoning and that’s really all you need. Add some cayenne for heat and a chopped onion for extra flavor. Love a good crockpot recipe!
Karen says
Glad you liked it!
Mary says
We hate chicken broth. Can we just use water?
Karen says
sure
LoraJ free says
My husband loves spicy food and he enjoyed this recipe. I used Johnville New Orleans Andouille Sausage and Emeril’s Cajun seasoning and Green Giant Gourmet Klondike pettite potatoes. I served it with some crusty bread. This will be a go to meal for the fall.
Karen says
Yum it sounds like a great meal!
Dianne says
I made this and it is delicious!
Karen says
Glad you liked it Dianne!
Terry says
I made this today, its great. My husband is on his second plate full. I left out the mushrooms. It is spicy but very tasty.
Karen says
Glad he liked it!!
Pamela says
If I just stick this in oven… how long would I cook for??
Karen says
Hi Pamela, I’ve never tried this in the oven. So I’m really not sure! I would say the potatoes will take a while make up to 45 minutes
Justin says
Horrible 🤭😔
Tammy W Jackson says
I have most of ingredients ….what if I don’t have chicken broth..and cant get to store
Karen says
Do you have chicken bouillon? Use that!
Rachel says
What about adding rice in with this? Would that be possible
Karen says
Would you still have the potatoes too?
Rachel says
Trying this out for friend’s weekly game night. I love corn so I will probably try to add some canned corn in there and maybe some carrots. I’m excited to try it!
Karen says
sounds like a good plan!
JudyB says
This is a delicious recipe and I make it all the time. Very easy to change out the type of sausage and the seasonings and sometimes I add carrots.
The only thing I do different is to cook it in my pressure cooker and it cooks in 5 minutes. Really, 5 minutes
Karen says
Thanks Judy!

I am making this for bible study. I want to make for 12-18 people. Will this got in a casserole slow cooker? How long would i cook it? On low? On high? If you can please respond soon. I have to make it monday.
Karen says
Oops just saw this! How did it go? What did you end up doing?
Amber says
I’m excited to try this! Would it be okay to cut down the butter in half? So 2 tbsp instead of 4? Thank you!
Karen says
Yep that will be totally fine!
Corrie says
Just wondering, this happens to be a recipe I’ve made a few times before and alas the sausage always ends up mushy. Any idea’s?
Karen says
Hmmm, what brand are you using? Have you tried different brands?
Julie says
I made this tonight using kielbasa. It was very good. I cooked on low for 4 hours and then on high for an additional hour (potatoes weren’t quite done after 4 hours on low).
Karen says
Thanks for sharing your experience Julie!
Doris Giles says
I can’t rate the recipe because I don’t have it. I would like the recipe please .d
Karen says
Hi Doris, the recipe is on this page. Just scroll until you see it. It’s formatted as a recipe card and you can print it too.
Carlee says
Can I add shrimp…?
Karen says
Yum yes. But add it after you pressure cook and just use the saute button to cook the shrimp. It cooks so quickly.
Karen says
If I’m using a high low crockpot how long do I cook it on low or on high?
Karen says
low 4 hours high 3 hours or until potatoes are done. All crockpots cook differently so it’s hard to give an exact time.

I made a ½ recipe of this in my Instant Pot Mini, using chicken andouille sausage from Costco and halved baby gold potatoes. I sliced the beans into 2″ pieces and omitted the mushrooms because I didn’t have any. It took longer than 4 hours (green beans and potatoes were still undercooked) and the clock was pushing 8pm, so I stuck the pot in the fridge for tonight. I reheated it on Sauté and after 20 minutes it was ready. Potatoes, sausage and beans were all tender, just perfect.
This was my first time cooking sausage (other than breakfast type), because I hate how fatty the various kinds of links are, so never buy them. We tasted the chicken andouille at Costco last week and what a revelation! They were wonderful, and not fatty at all! It was also my first time cooking with cajun seasoning, so I was a little worried on several fronts.
Well, the finished meal was delicious, if a bit too hot for me to handle. We both loved the combination of sausage, potatoes and green beans, and it couldn’t be simpler to make. This has earned a repeat, with half the cajun seasoning.
Thanks for helping me venture beyond my comfort zone, Karen. The trip was worth it!
Karen says
You have totally talked me into buying the chicken andouille at Costco! I will try it out next time I go!

This is one of my favorite recipes. I have made it several times. I use kielbasa and 3 tsp of Montreal Seasoning. Plus making it is easy and I don’t destroy my kitchen with food residue all over the place.
Karen says
oooooh I want to try it with the montreal seasoning. That sounds great!
Chelsea says
So simple but so good. As a new mom, my life depends on recipes like this one! The only change I made was nixing the kosher salt since the sausage and cajun seasoning already have enough (for my taste). Thanks for sharing!
C says
Can I use frozen green beans?
Karen says
I think you could. They might be a little mushy though.
Kenneth Sharp says
What Cajun seasoning to you recommend?
Karen says
I don’t have a specific one necessarily…I think I used McCormicks
Twodiffsocks says
Can add more vegetables? If so, what would you recommend? Also, can this recipe be cooked on high – for ththe slow cooker
Thanks
Karen says
Yes you could add in other vegetables. Maybe bell peppers or brussels sprouts and carrots. You can cook on high for about 2-3 hours.

Looking forward to cold Fall and Winter days when this will be a warm comforting meal!
Karen says
Yep! It’s hard to eat hot food in these dog days of summer! I’m looking forward to fall too 🙂
Carol says
Doing crock pot for friends this weekend. I will try this, it sounds great.
