Instant Pot Ranch Potatoes
Today’s recipe is a very simple one. Cubed yellow potatoes with a little ranch dressing mix and butter. But sometimes the simplest recipes are the best. I have a feeling this side dish of potatoes is going to be making an appearance at many of my dinners when I’m in a rush. These potatoes only need 6 minutes to cook in your electric pressure cooker and then you can do a quick release of the pressure. They turn out buttery and well flavored thanks to the ranch dressing mix. I just buy the big container of Hidden Valley at my Costco. It comes in handy for lots of recipes. I used yellow potatoes for this recipe but you could also use red potatoes and get the same results. I would be wary of using Russets though. I’m not sure the texture would be the same. However if you do use Russets I would increase the cooking time by a couple minutes.

What Instant Pot/Slow Cooker Did You Use?
For this Instant Pot Mashed Potatoes recipe I used this Instant Pot IP-LUX60 V3 Programmable Electric Pressure Cooker. It’s 6 quarts, so the same size as most slow cookers. It cost me around $80 on Amazon. When I made a similar recipe in the slow cooker I used this 6 quart KitchenAid Slow Cooker.

Would this work in the 3 quart?
Karen says
Yes for sure!

I made this before & it was SO good! I need to make a very large batch for a party. Do you suggest increasing the water in the same ratio? I’ll be tripling the recipe…do you think I need to triple the water?
Karen says
I would keep the water the same if you triple the recipe.

Any other seasoning ideas? I can’t find ranch seasoning without msg. One of my son’s is highly allergic.
Karen says
I also like the dry Italian dressing seasoning.
Joyce Beckman says
We have the same problem. You can find powdered buttermilk often in the baking aisle. You use half a cup powdered buttermilk and dried parsley, dried chives, dried dill and salt. There is a great recipes for this on the web. I used my homemade dressing in this recipe and the dressing was tasty, but I got a burn notice so I wonder if more liquid is needed.

Look on Pinterest I made gluten free/dairy free ranch mix and it has no msg
Sandra Shamblin says
Wondering how this would work with sweet potatoes. Any ideas?
Karen says
I would peel and cube the sweet potatoes and then use a short pressure cooking time. They cook quick! I would use a 2 minute pressure cook time.
Trudy says
I made these and put broccoli in my steamer basket on top to steam. It worked well. However, the broccoli needs to be in larger pieces otherwise it isn’t slightly crisp.
I tell everyone about your recipes. They are incredible!
Karen says
Thanks so much Trudy!
Garrett says
I made these potatoes and then once done spread shredded cheddar on top and put the lid on for three minutes to melt. They were amazing. I will also be using the leftovers and adding leftover steak and some scrambled eggs for breakfast!
Karen says
I want that breakfast!!
Melody says
Tried this with red potatoes and it turned out great. This was our very first recipe in our pressure cooker. We will definitely make this again.
Karen says
I love red potatoes. I need to try that.
Risa says
This was delicious! I put in 1 cup of homemade chicken broth because IP says at least 1 cup liquid and I’m terrified of BURN notice. Turned out out a little wet so I just sautéed high for a bit to reduce. Fabulous flavor! Thank you!
Karen says
Glad it worked well for you Risa!
Valerie says
Just made these to go with pork loin. We added cheese, just because, and they were delicious! Will definitely be making these again soon. Thank you for sharing.
Karen says
glad you liked them!

I had some small russet potatoes left in the bottom of the bag and needed a quick side dish – so I gave this a try. I pealed them and cubed them up and made them according to your directions. They were so tasty!! This will be a go to from now on! Thanks for a quick, easy, and delicious recipe!
Karen says
You’re so welcome! I’m glad you liked it 🙂

I am trying this recipe camping, but cooking for 5 adults and 3 kids as a side dish. How much did this recipe make, as far as servings go?
Karen says
I’d say 4 people. I would double it if I were you.
Christin says
If I want to double the recipe how long would I have to cook it for then
Karen says
same time!
Antoinette says
Thanks for this recipe. I used the mini potatos in the variety of colors and cut them in half. They turned out so great that I am making them today for the 4th.
Karen says
Oh I love that type of potatoes! I’m glad you liked them.
Judy says
I made this recipe yesterday. Need some clarification. I used 3 large large potatoes thenkind you buy in the store for baking. I cut them up and realized I had too much potato I think you mean 3 large potatoes out of a bag. Please clarify that for me. I then put almost 1 cup of water I gave an 8 quart IP. And put in for 8 minutes. As it is coming to pressure it clicked on burnt. I released the pressure right away and waited until pressure was released and then opened lid up. So this happened. It wasn’t really burnt would have been I think if I wasn’t right there when it turned on the burnt sign. And they were actually quite delicious. But what did I do wrong? I’m fairly new to the IP world
Karen says
Hi Judy, I’m sorry yes I meant the kind from the bag. And with the 8 quart instant pot I believe you need more liquid. Does it say in your instruction manual? I believe you need at least 1 1/2 cups of liquid in your instant pot for the pot to come to pressure. Just increase liquid next time. I’m glad they sort of turned out anyway!!
Garrett says
I used an 8 qt with the 1/2 cup and it worked just fine.
Janie says
Would a 32 oz. bag of frozen hash browns work? I’m guessing I’d need to extend cooking time or thaw them first?
Karen says
I am not sure how it would work. But I wouldn’t thaw first if I were you. I would throw them in frozen and do a zero or 1 minute pressure cook time since they are parboiled they will cook very quickly.
barb says
how many ups of potatoes would you say you used? Potatoes can be so different in size!
Karen says
probably about 4 1/2 cups of potatoes
Tiffany says
Do you think broccoli could be added to this or would it be way too squishy? And does your end up with leftover water in the pot like mine did?
Karen says
Hi Tiffany, there was a little bit of water. But not much. I wouldn’t add broccoli in because when I cook broccoli I use a zero minute pressure cook time. So it would probably be disintegrated.
Melissa says
I only had Fiesta ranch mix in hand so I used that. FABULOUS! Thanks for the recipe!
Karen says
NICE!
carol says
these are fabulous…i turned my instant pot to saute after they were done, added a little olive oil and sautéed them for a few minutes..they do stick to the bottom, though.
Karen says
yum yum! sounds fantastic 🙂
Beth Ann says
Did you use the low or high pressure?
Karen says
High!
Jaime says
Would red potatoes also work?
Karen says
yes, totally!
Cammie says
If I double the amount of potatoes and seasonings, should I also double the amount of water?
Karen says
Yes double the water 🙂
Amy says
Do you put potatoes in a steamer basket or directly in the pot?
Karen says
I put them directly in the pot.
Peggy says
My electric pressure cooker (8.5 qt not IP brand) calls for always having 1 1/2 cup water when cooking. Would that make these potatoes mushy?
Karen says
I bet it would be ok. You may need to drain some of the water.
Sarah says
Do you think you could double the recipe, if so using the instant pot would you double the time then? Thanks
Karen says
You could totally double the recipe. Don’t double the time. Keep the time the same.
Cammy says
This sounds like something I have been watching for so I could use it in breakfast burritos. Hope you don’t mind that I want to drain them after they are cooked and brown them and a tablespoon or so of minced onion in some bacon or sausage grease (I know it’s not over healthy but, I love bacon grease to season) along with the bacon or sausage and add scrambled eggs to make breakfast burritos like a friend used to bring us at work. Thank you for the recipe.
Karen says
such a great idea! I was saying to my husband that these potatoes would be amazing with bacon in them 🙂
