Instant Pot Bacon Barbecue Meatloaf with Mashed Potatoes

Usually meatloaf is one of those meals that is pretty neutral for me. I don’t love it and I don’t hate it. Today that is no longer the case. I LOVE meatloaf. More specifically I love this instant pot bacon barbecue meatloaf with mashed potatoes. The flavor was absolutely delicious and my whole family scarfed it down in like 2.2 seconds. We all wished that I had made more!

You need to make this recipe this week for dinner. The reasons?

  1. It has bacon in it and the bacon gives the meatloaf an amazing flavor.
  2. You can make mashed potatoes and meatloaf at the same time, in the same pot, in 20 minutes.
  3. The consistency of the meatloaf is perfect. It’s not mushy, it’s not dry.
  4. Mashed potatoes are delicious and these garlic mashed potatoes are the only kind I make these days.

What Instant Pot Did You Use?

For this Instant Pot Bacon Barbecue Meatloaf with Mashed Potatoes recipe I used my 6 quart Instant Pot Duo 60 7 in 1 for this recipe. I also own the 6 quart Instant Pot IP-LUX60 V3 Programmable Electric Pressure Cooker. They are both great pressure cookers! The first one I mentioned has a yogurt making function but other than that they are fairly similar. The price difference between the two is about $20.

Description

The best flavored meatloaf ever is cooked at the same time and in the same pressure cooker as your mashed potatoes. Add a tossed salad and you have a complete meal ready to go in just a few minutes. 


Ingredients

Units Scale
  • 10–12 small to medium yellow yukon gold potatoes
  • 1 bay leaf
  • 1 tsp kosher salt
  • 2 garlic cloves, peeled
  • 2 cups water
  • 1 lb lean ground beef*
  • 1 tsp garlic powder
  • 1 Tbsp worcestershire sauce
  • 1 egg
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup Italian seasoned bread crumbs
  • 1/4 cup Sweet Baby Ray’s bbq sauce
  • 6 strips of bacon, cooked and crumbled
  • 3 Tbsp butter
  • 1/4 cup sour cream
  • 1/4 cup milk

Instructions

  1. Wash the potatoes and cut them into quarters. Place them in the bottom of the Instant Pot. Add in the bay leaf,  1 tsp kosher salt  and garlic cloves. Pour in the water. Place the trivet on top of the potatoes with the handles facing up.
  2. In a bowl combine the beef, garlic powder, worcestershire sauce, egg, 1/2 tsp kosher salt, black pepper, bread crumbs, bbq sauce and bacon. Use your clean or gloved hands to mix thoroughly.
  3. On the top of a piece of non-stick foil form the meat mixture into a oblong shape that will fit inside your Instant Pot. Carefully transfer the foil and the meatloaf on top of the trivet.
  4. Cover and secure the lid and press the manual button. Set the timer for 20 minutes on high pressure. The valve should be set to sealing. When the timer goes off do a quick release by moving the valved to venting.
  5. Open the lid and lift the foil and place on a pan. Baste the top of the meatloaf with bbq sauce and place under the broiler in your oven for 2 minutes.
  6. Remove the trivet. Discard the bay leaf. Drain all the water out of the pot. Add in the butter, sour cream and milk. Mash the potatoes with a potato masher. Salt and pepper to taste.
  7. Slice the meatloaf and serve with the potatoes.

Notes

*I made this once with beef and once with ground turkey. I definitely like the beef better but the ground turkey was also good.

I used my 6 quart Instant Pot Duo 60 7 in 1 for this recipe.

    I have made this meatloaf several times and my grandson and I really enjoy it! The bbq sauce and bacon make it wonderful! I cook it in the oven rather than the IP and it is always wonderful. Definitely a keeper!

    I’ve made this once and now this is my “go-to” recipe for meatloaf. It was so good, I was eating the leftovers straight from the fridge … cold 😁

    I just made a second time to freeze and take on an RV trip. Can I cook it from frozen or should I defrost it first? I assume if I cook it from frozen, the time remains the same?

      I believe it would need more time if cooked from frozen. I haven’t tried it myself so I am not 100% sure on how much time it will need.

    Saw this again on your kids’ favorites email and I just couldn’t put it off any longer. Finished my plate 30 minutes ago and my mouth is still happy! I doubled the recipe and did the meatloaf in my IP cake pan, and used meatloaf mix because my wife & I love it. Used Lipton onion soup mix in lieu of the garlic powder because my wife can’t imagine meatloaf without it. Used half BBQ sauce and half Heinz chili sauce in the mix and it just adds that extra note. Mashed potatoes came out fabulous as well, not lumpy at all. Thanks for a great recipe, and tell Reagan she has a future in front of a camera, if she so chooses.

    Hi Karen, I made this in my IP & it was wonderful! Now I’m in transit, staying with my granddaughter & want to make it for her. Only problem, she can’t find the trivet for her IP. Can I make this with a double layer of foil around the meatloaf & no trivet? She almost never uses her IP & I really want to show her some of your amazing recipes AND how easy the IP is to use!!!

    Loved this recipe! My husband said it was the best meatloaf he’d ever eaten! And…he normally doesn’t express this much excitement about meals! I followed suggestion to fry bacon in IP. It worked great! I saved the drippings to use cooking my New Years smothered cabbage! After reading a lot of reviews, I decided to use the IP nonstick pot in pot for cooking the meatloaf rather than foil. The meatloaf was cooked perfectly! Glazed w/BBQ sauce and put the pan in oven to broil. Mash potatoes were great too! Planning on passing this recipe on to my Son! It’s a keeper!     OMG!!! This was ABSOLUTELY THE BEST MEATLOAF EVER!!!! Up north we have meatloaf mix (beef, pork & veal). Here in the south (Richmond VA), it’s only beef. The mix is so much better for classic meatloaf recipes but, in this recipe, it so didn’t matter. LOVE LOVE LOVE this recipe & the potatoes were also wonderful!!!!!!

      Hi Karen (from another Karen) 🙂 Have you tried making this with the standard meatloaf mix of beef, pork and veal? I think it’s a Yankee thing because not easy to find here in VA where I was transplanted from Ohio. It’s definitely worth using it over straight beef. What fat content do you recommend using. I prefer low fat but that can turn out dry. Thoughts?

        Karen, it’s a little late, but your mixture should be fine. I use 1/2 HoT Sausage and 1/2 Lean Ground Beef in this recipe and it works great. All fat gets poured out into a jar at the end of cooking and before BBQ Sauce topping if it looks a little too fatty… be gentle on the pour though. I lost a loaf into the sink bc I was too aggressive and in a hurry.

    I haven’t made this yet, but will soon in my 8qt. IP. My question is…. can I use whole ‘new’ potato’s on the bottom NOT cut up? They are small so I don’t want to cut them, and won’t mash them either.
    would the cook time remain the same?

    Im a widowed senior always looking for recipes for my 6 qt ip that can br vacuum sealed and freezes well (chili, soups and my fav Cheesy Enchilada Rice) and this meatloaf was great. Used lean ground sirloin shaped into 4 mini loafs and less than half amount of potatoes, and all came out perfect in 10 minutes. Recipe says 4 servings but more like 3 for me – will shape into 3 loafs next time.

    I plan to cook the meatloaf in the Daddio pan that you often use (steel cut oats). Will this increase the cooking time? I am not changing ingredient amounts. Also, I plan to use russet potatoes. What weight should I aim for and will they require longer cooking time? Thanks.

      The potatoes will be just fine as long as they are cut up. The meatloaf should be fine too. I would not cover it with foil. I’d use 2 pounds of potatoes.

    I found your ingredient list quite confusing because everything was together, but I think I have it straight. I have been using the same meatloaf recipe for 45+ years and was happy to find a similar InstaPot one. It has milk in it. I guess that is part of what confused me about this one. Also, I use oatmeal instead of bread crumbs, etc. It is so easy and always on hand. I keep saying I am going to try something else, but that means buying something special. I love your website and many of your recipes. My favorite thing to make is yogurt. I got a 3 qt. IP from my daughter for Christmas because it is just me. I love my InstaPot so much I bought myself a IP Duo Plus. I love to freeze the leftovers. I eat an IP meal probably 18 times a week. Thanks again for your wonderful website.

    great. modified meatloaf slightly (used less bbq sauce; added sauted mushrooms; skipped bacon) but timing & concept of cooking potatoes and meatloaf together was perfect! Carefully lift foil & meatloaf out of pot – mine had lots of “juices” just waiting to make a mess!

        I have made the meatloaf multiple times (my daughters love it) but I haven’t made it with the potatoes in the bottom (had a bunch of the instant potatoes to use up). My question was do you let the juices drip into the potatoes or use pan/deep dish to keep them separate?

    A week ago I skipped the loaf and made this recipe into big meatballs, dropped them into silicone cupcake liners (I think I used 7), and cooked over rough chopped russets for 10 minutes. When they were done, I dumped them onto a baking sheet and broiled them for a few minutes while I mashed the spuds.

    Flavor, still phenomenal. Effort, even less than before. Same great taste in half the time? Priceless!

    Long story short, this has been my only meatloaf recipe for 2 years, the one that kicked Ree Drummond’s to the curb, and I think I just upped the ante for meatloaf nirvana. Yay!

    I made this for my family tonight for the first time in an 8 quart instant pot duo crisp, and tripled the recipe. I added 15 minutes of cook time and it came out great. I have never liked meatloaf, but was intrigued by this recipe and I loved it. My family loved it as well. My wife loved the potatoes most. 5 of us ended up only eating a bit less than half though. Lots of leftovers is not a bad thing though. Thanks for the great recipe.

    I made this tonight and it was delicious! My husband loved it. I had 2lbs off ground beef and doubled all the ingredients but still cooked it at 20 minutes in a spring form pan instead of foil. It was completely cooked and moist. I’m sure the leftovers will be even better tomorrow. Thank you!

    I saw the question asked a few times but maybe I missed the answer. If you double the recipe, do you double all ingredients? Do you enclose the meatloaf in the foil or what?       Yes double the ingredients. And a thicker meatloaf may need more time to cook. Add 5-10 minutes. I didn’t enclose my foil but you can if you want. Good luck!

    Can I put the meatloaf into a mini Bundt pan and on top of the trivet? I don’t plan on using potatoes. Would the cook time be the same with the Bundt pan?

        THis actually is a more of a new question post than a reply, so i may be in the wrong place on the website to do that. I am new to ‘posting comments’ and the instant pot. Love my new IP – have only had it since August, but I use it ALL THE TIME. Have gotten lots of recipes & tips from this website that I use over & over. THank you for being such a great resource! For this meatloaf recipe, I notice you have a ‘scale’ button which I can double the recipe. THe ingredients are doubled but the timing is the same for the pressure cook function. As I’ve noticed with other recipes, I think the rule is that even though the COOK time may be the same, the time it takes to BUILD the pressure is where extra time comes in; is that correct?? I have an 8 qt Instant pot. I love the idea of making a giant meatloaf (LOTS of leftovers-cook once-eat 6 meals-ish) with the potatoes all in ONE pot!! Planning to try it soon. Also, if I dont have nonstick foil, I’m going to try spraying reg foil with Pam. THoughts?? THanks!!

    I’ve made this twice now and my family has devoured it both times. I really love using my Instant Pot so I can make meatloaf without heating up the house during the summer months. To save time on clean up, I fried up my bacon in the Instant Pot and removed it and the drippings before everything else, using the water for the potatoes to deglaze the pan.

    I’ve sung this recipe’s praises before, but after making it again last night just had to do it one more time. I am not a fan of most meatloaves, finding them too bland, too one-note, too just not worth it. Not this one! It’s bursting with flavor, all in perfect balance. It’s the only one for me, I haven’t even looked at another meatloaf since meeting this one.

    I’d cook it on it’s own (and have), but the kicker that takes it from Great to Genius is cooking the potatoes at the same time. Brilliant!

    We really enjoyed this recipe! I wasn’t sure if I was supposed to totally enclose the meatloaf in foil but decided to do so to keep the grease out of the potatoes. Turned out fabulous. The meatloaf did not hold together like a baked meatloaf normally does, but the flavor made up for it. The potatoes had just a hint of garlic and a faint flavor from the bay leaf, which I really appreciated. We will make this meal often. Thanks for sharing a delicious meal. breezermom

    I’m new to the instant pot. So this recipe is 15 minutes prep and 20 minutes to cook, but this doesn’t include the time needed to reach pressure and depressurize, right? Can I leave this on warm for any amount of time or will it turn into mush? Thanks!

          Ummmm. I think it would be a little tricky to form the parchment to that it holds the meatloaf together and doesn’t drip into the potatoes. Having said that, if you can figure it out then yes parchment would be okay 🙂 Good luck! Let me know how it goes!

            I put in a piece of parchment, then the foil, then another piece of parchment so that the foil does not touch the meat or potatoes.
            Great recipe. My daughter loves meatloaf, but her husband and children do not, so we’re going to have a girls night and eat it all ourselves!!!

      I made it in a 6 cup Nordic Ware navy Bundt pan I got on Amazon for $10. Works great. You can pour of any grease when it’s done and cut wedges for servings that stay together.

    Had to leave a comment because this recipe is amazing!! This was my first ever instapot meal and it was perfection! The mashed potatoes were easily the best I’ve ever had (creamy AF without too much milk/butter and omitted the sour cream only as we didn’t have any) – my husband loved them!

    There are no leftovers between the 2.5 of us (~2 y/o) and this will 100% be on our regular roster. My husband loooves meatloaf but I usually kaibosh it on weeknights because it’s so time consuming. Now I don’t have to and I know he’s going to love it!

    I just made this today. My family can’t stop raving about it, like over and over. There are two of them eating and I don’t think there will be an ounce left. I made this with 1 lb of grass fed beef, 3 strips of gluten free bacon because that was all I had on hand, gluten free bread crumbs and the rest just as written. I have the mini 3 qt pot so used two small russet potatoes. The 1 lb of meat fit just fine on the foil flattened out to fit below the fill line. 20 minutes was perfect. I did not use sour cream but whipped the potatoes with butter, milk and heavy whipping cream, they were heavenly. This was my first time to make a real one pot meal. I am super proud of myself so thanks so much for this easy and satisfying recipe. This is a keeper for sure!! BTW Sweet Baby Ray’s is gluten free.

    This delicious meatloaf with mashed potatoes turned out perfectly and had a wonderful flavor. I did not have enough barbeque sauce to brush on top, so made a brown sugar glaze and finished it under the broiler for a few minutes. Approximately 1/3 cup ketchup, 1 tbs mustard, and 2 tbs brown sugar, adjust to taste.

    Karen, this meatloaf is SO good! I’ve been making Ree Dummond’s meatloaf (adapted for the IP by Barbara Schieving) for a while and admit I was worried about adding so much BBQ sauce in the mix, but it wasn’t overpowering at all, it just tasted delicious, better than Ree’s recipe. Lacking the breadcrumbs, I made fresh ones using ½ a burger bun plus some Italian seasoning and it was fine.

    I may sneak in some grated carrot or zucchini next time, but either way, this is my new go-to meatloaf recipe. Cooking the potatoes with the meatloaf is genius! Thanks to you and your daughter for a terrific recipe and video. Well done, ladies!

    This recipe is very Delicious!
    My first time using the InstantPot, and I picked your recipe since it looks so delicious. I’m glad we tried it. I doubled most of the ingredient in the recipe except the bacon. I used 2 lbs of meat (beef & pork), added onion to the meat for crunchiness, 1 tsp of paprika, panko instead of breadcrums and 7 skinny sweet potatoes. Set the time for 25 minutes … and Delicious.

    This was very good. I did make a couple of changes, and will make one more if I do it again, which I think I will. I put in 4 pieces of bacon instead of 6, trying to save some calories and sodium, since I have to watch both. I could not taste any bacon and neither could my husband. I think I will leave it out completely next time, and save some more in the sodium and calorie department. I don’t think 2 more pieces would have made that much difference, but maybe. I used No Salt salt substitute because I have to. I also added about a half of a diced onion because I like onion in my meatloaf. I can’t imagine that masked the bacon flavor, but if so, I’ll choose onion. I used 93% ground beef and Bullseye BBQ since it’s my favorite. I put in 2 red potatoes instead of the yukon because it’s what I had. I think your potatoes must have been very small because we had plenty of potatoes with just 2 slightly large potatoes. All those changes aside, the flavor and texture were wonderful. I made it in my Mini and still made a 1 lb meatloaf. Thank You!

    I haven’t made this yet but have a question. Why would you need 10 to 11 potatoes for 4 servings? I was always taught 1 per person, plus one for the pot. Seems like a lot of potatoes…

    Recipe looks awesome! Making this tonite and wondering if the bacon has to be cooked prior to. Can I just chop the bacon and add it raw? What benefit does the cooked bacon add? Also, have you tried wrapping it in the bacon in the IP? Does it crisp up at all? Thanks!

      Hi Kristina, I’ve use both uncooked and cooked bacon. I preferred the cooked bacon because of texture. You can do uncooked if you’d like!

    This was the first real meal cooked in my new instant pot. Was so happy with the results. My husband still keeps talking about how good it was. I only made a couple changes. I did not put in the bay leaf, I added a diced onion to the mix and just mashed the potatoes the way I normally would with sour cream. I reminded me so much of the meatloaf my Mom used to make.     This was great! The best meatloaf I ever had. Served to a picky family of 4. They ate it all. I couldn’t believe it. I added 1/2 pound of ground pork and did 1.5 of the BBQ sauce and breadcrumbs. Kept the other ingredients the same. Also added 2 minutes of time to care for the larger meatloaf. Turned out great!

    This was fantastic and so easy. I doubled mine, used 6 small-medium russet potatoes quartered and still only used 2 cups of water. I increased cooking time to 25 minutes to make up for using russets and doubling the meatloaf. In the end, I had to do an additional 5 minutes as the meatloaf wasn’t quite cooked through. I’m new to pressure cooking so I’m still getting the hang of it. I use the 6qt size Power Pressure Cooker XL and it scorches pretty easy so I put the water in first, then used the wire rack for canning to put the quartered potatoes on. Then added the bayleaf and garlic. Placed the meatloaf on foil directly on top of the potatoes. Nothing scorched and everything cooked evenly. Hope these very minor changes I made when doubling the recipe can help someone along the way! Thanks for the delicious dinner. 🙂

      yes, you can make it without the potatoes. Put a cup of water in the bottom though to bring pot to pressure. Same cooking time.

    Recipe sounds interesting; but, you need to tell your daughter that while cooking to pull her hair back into a ponytail/bun. She touched her hair at least 7 times while the video was running. Some folks see that as a reason to stop and go wash your hands again. Very possibly that her hair was clean; regardless, don’t touch your face or hands while cooking is not good. That was almost a turnoff for me.

    This was fantastic! I used this as my first instant pot recipe since meatloaf and potatoes are pretty forgiving and can just go in the oven / on the stove if I break the IP. It was wonderful! I meal prep so I actually was able to fit 3 lbs of meat (two of which was turkey – still came out super moist) and enough potatoes in the pot no problem! Like you said, it did take a while to get pressure, but all in all I had 8 meals done in an hour, to include prep and unpackaging the IP. All in all, great recipe for newbies to try out the IP and a wonderful recipe! Looking forward to testing out some more of your recipes this weekend.

    This is THE BEST meatloaf my entire family has ever had. Juicy, tender, flavorful. Amazing. Tastes even better the next day as a sandwich on toasted bread! My picky 9 year old requests it at least once a weeK. I am as a little worried that the BBQ sauce would be overpowering, but it creates the best flavor!!!! I did add diced onions before cooking as well as chopped the garlic for the potatoes instead of leaving it whole. Don’t skip the broiler step. Try it. You won’t regret it.

      I would put a cup of water in the bottom of the pot. Then place a trivet in the bottom. Then make the meatloaf as stated above and place it in the foil. Place the foil on top of the trivet and cook as stated in the recipe. Good luck!

      I think it depends on which IP you get – our does not have one, and I didn’t know that before planning on having this as our first recipe cooked in our Christmas present. I also didn’t have a scale to measure out a pound of gb, so not sure how much meat I used but the loaf did NOT cook in the time set.

      Hi megan,
      Just pour the water and potatoes into a colander in the sink. You’ll want to get all the water off of the potatoes. Then put the potatoes back into the instant pot.

        It will probably be good with just 20 minutes for 2 lbs or meat…it will just take longer to build pressure.

    Hi! Could I use russet potatoes instead of yukons since I already have them? Would the cooking time be the same or altered? I have four rather large russets so I don’t want them to go to waste.

      Russets would probably take a few more minutes to cook. So you may have to take out the meatloaf and then pressure cook the potatoes for a few extra minutes. I’m not sure on the exact times since I haven’t tried it yet.

      I used 6 small russets, peeled and halved. But I also cooked the meatloaf for 25 minutes (5 minutes longer because I had 1.3 lbs of ground beef). The potatoes turned out great, some of the best tasting mashed potatoes, in fact.

    Hi Karen,

    I love the fact that you include a reminder to set the valve to sealing! I am pretty new to this instant pot cooking (and loving it!), but I’ve messed up a couple of times – and both times it was because I forgot to check that the valve was set correctly. Luckily I caught it before the pot went dry – but it could have been an epic fail – and pizza for dinner those nights!

    The meatloaf looks delicious and it is a great bonus that the potatoes and the meatloaf cook at the time time – I will be trying this later this week.

    Thanks for the great resource and all the interesting recipes.

      Haha! It’s a bummer when I forget to change the valve to sealing so I try to include it in the instructions so people won’t forget!

          Hi Karen, I made this in my IP & it was wonderful! Now I’m in transit, staying with my granddaughter & want to make it for her. Only problem, she can’t find the trivet for her IP. Can I make this with a double layer of foil around the meatloaf & no trivet? She almost never uses her IP & I really want to show her some of your amazing recipes AND how easy the IP is to use!!!
