1 lb extra-lean ground beef
3/4 tsp garlic powder
1/2 tsp oinion powder
2 cups instant rice
2 14 oz cans stewed or diced tomatoes, not drained (I used italian style, but any will work) (I used 1 can of diced and 1 can of stewed)
4 large green bell peppers, cored and seeded
Combine ground beef, garlic powder, onion powder, rice and 1 can of tomatoes in medium bowl and mix well. Stuff mixture into cored bell peppers. Arrange bell peppers in crock pot. Cover and cook on low heat for 8-9 hours or high heat for 4-5 hours. To serve, cut peppers in half and spoon 1 can of tomatoes on top. (Important to cut them in half before spooning the tomatoes because the centers will be a little dry without the added juice)

This was delicious. I served it at a barbecue and those who ate it gave it 4 stars. I did need a 6 quart crock pot for it. I froze the leftovers so we can have them again soon.
