3/4 pound ground beef
3/4 pound ground pork (I used 1/3 beef, 1/3 Italian sausage, and 1/3 ground turkey)
1/4 cup chopped onion
2 cloves of garlic, finely chopped
2 tsp Italian seasoning
1/4 cup Italian-style dry bread crumbs (I just used regular bread crumbs)
1 egg; slightly beaten
1 jar (28 oz) marinara sauce
Mix beef, pork, onion, garlic, Italian seasoning, bread crumbs, and egg. Shape mixture into twenty-four 1 1/2 inch balls. Place a rack in your slow cooker and place meatballs onto rack. Cover and cook on low setting for 6-7 hours (this was too much time for my cooker. I would put it in for about 4 hours in my 6 quart slow cooker). Serve meatballs with spaghetti, if desired, and pour warmed marinara over the top.
Review:
I was so excited to use my little cooking rack for these meatballs. It worked so great to drain the grease, making the meatballs healthier and not dripping in grease. I bought my rack at a kitchen store and it is actually just a little baking rack. It wasn’t necessarily made for the slow cooker but it works great for that purpose. I did keep the meatballs in the slow cooker a little long and they were overcooked. It was nothing that the marinara sauce couldn’t mask. 3 stars.
