6 bone-in chicken thighs, skin removed
1 tsp dried oregano
1/2 tsp salt
1/4 tsp pepper
1/4 water
3 tbsp lemon juice
2 garlic cloves, minced
1 tbsp chicken bouillon granules
6-12 small red potatoes, quartered
1. Place red potatoes in the bottom of slow cooker.
2. Combine oregano, salt, and pepper; rub over chicken. Place chicken on top of red potatoes.
3. Mix water, lemon juice, garlic, and bouillon together. Pour over chicken. Cover and cook on low 4-6 hours or until potatoes are tender.
Review:
Light and tasty. You have potatoes and meat…just add a salad and your dinner is ready. Next time I make this I will have fresh lemon to squeeze over the chicken right before serving. 3 1/2 stars.
