I know there must be others like me that would love to have several dinners
prepped at one time. I was able to do the grocery shopping for 5
meals in minutes and then prep the freezer meals and clean up in
about 45 minutes (but who’s counting).
Today we will be making:
Chicken Enchilada Soup
Asian Chicken Barbecue
Mustard Tarragon Chicken
Cheesy Chicken and Lentils
Chicken Sloppy Joes
Because we are just using chicken in all the recipes it’s cheap and really fast to get these meals together. I like to shop for chicken when it’s on sale or buy it at Costco in the freezer section. The big bags of boneless, skinless chicken thighs at Costco are about $2 per pound and work wonderfully for these recipes.
I had a lot of the ingredients for these recipes in my pantry already and I bet you will too. So make sure to compare the grocery list with what’s already sitting in your pantry before you head to the store.

This is exactly what every busy parent needs! I usually do a good portion of my cooking for the week on Sunday, but I have to admit, I rarely put together a bunch of freezer meals unless I am making double of what we are cooking for the week. I need to start doing this more…it would make my life so much easier!
